List every step in the process and identify the hazards that could reasonably occur at each: biological (Salmonella in raw chicken, Listeria in chilled ready to eat food), chemical (cleaning agents, allergens), physical (glass, metal, bone, plastic). Decide which are significant and what controls prevent them.
A critical control point, CCP, is a step at which control is essential and can be applied to prevent, eliminate or reduce a hazard to an acceptable level. Cooking, chilling, hot holding and receipt of chilled deliveries are the usual CCPs in catering. Not every step is a CCP; a decision tree helps decide.
Each CCP gets a measurable limit separating safe from unsafe: cook to a core temperature of at least 75 degrees Celsius, chill to 5 degrees or below, hold hot food at 63 degrees or above, reject chilled deliveries above 5 degrees, cool cooked food to 5 degrees within a set time.
Decide what is checked, how, how often and by whom: probe the core temperature of each batch, read the fridge display at opening and closing, check delivery temperatures at the door. Monitoring must detect a loss of control in time to act.
Decide in advance what happens when a critical limit is missed: continue cooking until 75 degrees is reached, discard food held above 8 degrees for more than the permitted time, reject the delivery, call the engineer, record the action. Nobody should have to improvise at the moment of failure.
Confirm the system works: calibrate probe thermometers, review records weekly, audit the plan, check that monitoring is being done as written, review after any complaint or incident and at least annually.
Keep the HACCP plan itself and the records that prove it operates: temperature logs, delivery checks, cleaning schedules, training records, corrective action records. This is what the Environmental Health Officer reads first.
