Employee Rights Regarding HACCP.
Irish health and safety law gives employees important rights relating to HACCP at work.
Right to Training
Your employer must provide HACCP Training before you start preparing, handling or serving food.
Right to Equipment
You can request the equipment you need to keep food safe, such as probe thermometers, colour-coded boards and adequate refrigeration.
Right to Safe Systems
Your employer must put safe systems of work in place that minimise food safety risks, including clear procedures and a documented HACCP-based system.
Right to Report Concerns
You can raise concerns about unsafe food handling practices without fear of negative consequences from your employer.
Your Responsibilities as an Employee.
While employers have primary responsibility for workplace safety, employees also have legal duties under the Safety, Health and Welfare at Work Act 2005:
- Attend training - Participate in HACCP Training provided by your employer
- Use equipment - Use food-safety equipment as instructed
- Follow procedures - Apply the safe food handling methods learned in training
- Report hazards - Notify supervisors of unsafe conditions
- Do not take risks - Never handle or serve food you believe is unsafe
Understanding HACCP Training
HACCP Training teaches you how to handle, prepare and serve food safely. The training covers:
- Legal framework - Understanding Irish and EU food hygiene law
- Hazard awareness - The biological, chemical, physical and allergen hazards in food
- Temperature control - The danger zone, safe cooking, chilling and hot-holding
- Illness prevention - How foodborne illness occurs and how to prevent it
- Practical methods - Safe food handling, hygiene and cross-contamination control
Good HACCP Training empowers you to protect the people you cook for. The practices you learn can prevent foodborne illness and keep your customers safe.
Can I Complete Training Myself?
Yes. While employers should provide or arrange training, you can also complete a HACCP Course independently. This is useful if:
- You are job seeking and want to be ready for employment
- Your current employer has not yet organised training
- You want to refresh your knowledge
- You work in a casual or contract role
Our online course costs €35 and provides an instant certificate upon completion. Many job seekers complete the course to improve their employability.
How to Protect Yourself at Work
Beyond formal training, here are practical steps to protect yourself from food poisoning incidents:
- Wash your hands well - Before handling food, after the toilet, and after touching raw food or waste
- Separate raw and ready-to-eat - Use colour-coded boards and store raw meat below other foods
- Cook food thoroughly - Check the core temperature with a clean probe before serving
- Keep the cold chain - Store chilled food at or below 5 degC and never leave it standing in the warm
- Clean as you go - Sanitise surfaces, utensils and equipment between tasks
- Check use-by dates - Rotate stock and discard anything past its use-by date
- Report illness - Tell your manager if you are unwell and stay off food handling until clear
