Wash Your Hands

Wash thoroughly with soap and warm water before handling food, after the toilet, and after touching raw food or waste.

Separate Raw and Ready-to-Eat

Use colour-coded boards and utensils, and store raw meat below ready-to-eat foods to stop cross-contamination.

Cook Food Thoroughly

Cook food to a safe core temperature and check it with a clean probe thermometer. Thorough cooking destroys harmful bacteria.

Keep the Cold Chain

Store chilled food at or below 5 degC and frozen food at or below -18 degC. Never leave food standing in the warm.

Cool and Reheat Correctly

Cool cooked food quickly, then reheat only once to at least 70 degC for two minutes before serving.

Clean As You Go

Sanitise surfaces, equipment and utensils regularly, and keep cleaning chemicals well away from food.

Check Dates and Rotate Stock

Follow use-by dates, rotate stock first-in first-out, and discard anything past its date.

Stay off food handling if you are unwell and for 48 hours after symptoms stop. Always tell your manager.

The anatomy of food poisoning

Understanding how harmful bacteria behave helps explain why certain controls keep food safe. Most food poisoning is caused by bacteria and viruses that are invisible, odourless and tasteless, so food can look and smell perfectly fine while becoming unsafe to eat.

These bacteria need food, warmth, moisture and time to grow. The danger zone between 5C and 63C provides ideal conditions, which is why temperature control and good hygiene are the heart of food poisoning prevention.

Common causes of food poisoning

  • Salmonella - Often linked to undercooked poultry, eggs and cross-contamination. Causes diarrhoea, fever and cramps.
  • Campylobacter - The most common cause of food poisoning in Ireland, usually from raw or undercooked poultry.
  • E. coli - Linked to undercooked mince and unwashed produce. Can cause severe illness, especially in children.
  • Listeria - Grows even at fridge temperatures and is dangerous for pregnant women, older adults and the immunocompromised.
  • Norovirus - A highly contagious virus spread by infected food handlers and poor hand hygiene.

Food poisoning is rarely caused by one dramatic mistake. It is caused by small, repeated lapses - a missed handwash, a fridge left open, a board used twice. Get the everyday basics right and you remove most of the risk.

Who is most at risk?

Anyone can get food poisoning, but some people are far more vulnerable to serious illness:

  1. Young children - Their immune systems are still developing, so even a small dose of bacteria can cause serious illness.
  2. Older adults - Weaker immune defences mean infections can become severe more quickly.
  3. Pregnant women - Some bacteria, such as Listeria, can harm an unborn baby.
  4. People who are unwell - Those with weakened immune systems or long-term conditions are at higher risk.
  5. Hospital and care residents - Vulnerable groups in catered settings need extra care with high-risk foods.
  6. Anyone eating high-risk food - Cooked meats, dairy, cooked rice, shellfish and prepared salads carry greater risk if mishandled.
  7. Customers of untrained handlers - Poor food hygiene puts everyone who eats the food at significantly higher risk.
