Cold storage: 5 degrees or below, fridge checked twice daily, food moved and engineer called if above. Cooking: core temperature 75 degrees; probe each batch; continue cooking if below. Cooling: from 63 to 5 degrees within about 90 minutes to two hours using shallow trays and blast chilling; discard if not achieved. Hot holding: 63 degrees or above, checked every two hours; reheat once to 75 or discard. Every check initialled on the daily sheet.
